Mushrooms À La Grecque

There are never leftovers when these succulent appetizers are served. Guests usually soak up the sauce with French bread. These mushrooms are also delectable tossed with a salad.

Recipe Ingredients

1 lb 454g / 16ozSmall button mushrooms*
1/3 cup 78mlOlive oil
3 tablespoons 45mlBalsamic vinegar
2   Garlic cloves - minced
1/2 teaspoon 2.5mlSalt
2 tablespoons 30mlBrandy
1/2 teaspoon 2.5mlFreshly-ground ground pepper
2 tablespoons 30mlChopped fresh parsley
1/2 teaspoon 2.5mlMinced fresh thyme
  = (or 1/8 tspn dried thyme)
1/2 teaspoon 2.5mlMinced fresh oregano
  = (or 1/8 tspn dried oregano)

Recipe Instructions

* Alternate Mushrooms: Common Store Mushrooms, Meadow Mushroom

Place all the ingredients in a saucepan and simmer very slowly for 10 minutes. Mix gently a few times. Allow the mushrooms to cool in the liquid. Drain and serve with toothpicks.

This recipe yields 12 appetizer servings.
