Greens And Diced Tomatoes With Lime Dressing

Recipe Ingredients

3 tablespoons 45mlOil
1 tablespoon 15mlLime juice
1/2 tablespoon 7.5mlHoney
1/2 teaspoon 2.5mlCider vinegar
1/4 teaspoon 1.3mlMinced seeded jalapeño
1/4 teaspoon 1.3mlSalt
  Grated zest of 1 lime
1   Green onion - sliced
  Freshly-ground black pepper - to taste
8 cups 880g / 31ozMixed greens
1 cup 62g / 2.2ozSeeded tomato - diced (large)

Recipe Instructions

Combine oil, lime juice, honey, vinegar, jalapeño, salt, lime zest, onion and pepper in bowl of food processor. Pulse to combine. (Can be made 1 day ahead and refrigerated. Let come to room temperature before using.) Makes about 1/3 cup.

Toss greens with dressing in large bowl. Taste and adjust seasoning. Top with diced tomato. Serve immediately.

This recipe yields 4 servings.
