Snow Pea, Pepper And Cabbage Salad

Recipe Ingredients

2 tablespoons 30mlOlive oil
1 1/2 tablespoons 22mlRice wine vinegar
1 teaspoon 5mlSalt
1/2   Sugar substitute
1/2 lb 227g / 8ozSnow peas
3 cups 711mlShredded green cabbage - (abt 1/2 lb)
1   Red bell pepper - thinly sliced
3   Green onions - thinly sliced
1/4 cup 36g / 1.3ozFresh chopped mint

Recipe Instructions

Mix olive oil, vinegar, salt and sugar substitute in a small bowl. Place snow peas with enough water to cover in a microwave-safe bowl. Cover with plastic wrap; microwave on high one minute. Drain and slice in thirds lengthwise.

Mix snow peas, cabbage, pepper, onion and mint in a large bowl. Add dressing; toss to coat. Chill 15 minutes to blend flavors.
