Guava Glazed Pork Loin

Recipe Ingredients

  Guava Glaze
2 tablespoons 30mlMinced garlic
1 cup 62g / 2.2ozMinced onion
1/4 cup 59mlDry sherry
1   Guava marmalade - (18 oz)
1   Tomato salsa - (8 oz)
4 tablespoons 60mlDark corn syrup
3 tablespoons 45mlWhite vinegar
  Pork Loin
1   Pork loin - (5 lbs)
  Adobo seasoning
12   Garlic cloves

Recipe Instructions

For the Guava Glaze: Combine all ingredients and simmer in a large saucepan for 2 hours at very low heat.

For the Pork Loin: Season pork loin with Adobo and stuff with the garlic cloves. Bake in a preheated 350 degree oven for 18 minutes per pound.

When meat is nearly fully cooked, baste with guava glaze and cook for another 5 to 10 minutes. Place on a serving platter.
