Cucumber Watercress Salad

Recipe Ingredients

1   English (European) seedless cucumber - diced
1 1/2 cups 60g / 2.1ozWatercress leaves
  = (the yield of a healthy bundle)
3 tablespoons 45mlHoney
3 tablespoons 45mlWhite vinegar
3 tablespoons 45mlCold water
3 tablespoons 45mlFinely-chopped fresh dill
  Coarse salt - to taste

Recipe Instructions

Combine cucumbers and watercress in a large bowl. Whisk the honey, vinegar, and water together. Pour over salad and toss well to combine. Season with dill and salt and toss salad again.

This recipe yields 4 servings.
