Chicken with Noodles and Vegetables and Thai Peanut Sauce

Recipe Ingredients

  Noodles
1 lb 454g / 16ozLinguine - (dry)
14 oz 397gBoneless chicken breast
1/2 teaspoon 2.5mlVegetable oil
2 1/2 cups 365g / 12ozBroccoli florets
3 cups 330g / 11ozJulienned carrots
1 tablespoon 15mlChopped peanuts
1 tablespoon 15mlFresh parsley

Recipe Instructions

Pasta: Cook pasta in boiling water according to package directions. Cut chicken into small strips and pound thin. In a non-stick skillet, add oil and cook chicken for 10 minutes. Add broccoli, carrots and red peppers. Saute. Toss with Thai Peanut Sauce and sprinkle with chopped peanuts and parsley. Serve hot.
