1 cup 237mlPrepared red chilies
10 tablespoons 150mlShallots - chopped
5 tablespoons 75mlGarlic - chopped
10 tablespoons 150mlLemon grass - finely sliced
5 tablespoons 75mlGalangal - grated
1 tablespoon 15mlCoriander seeds
1 tablespoon 15mlCumin seeds
5 tablespoons 75mlCoriander root. Chopped
1 tablespoon 15mlKapi (fermented shrimp paste)
5 tablespoons 75mlFreshly toasted peanuts - crushed

Recipe Instructions

Follow the same method for Green Curry Paste, toasting the seeds, then blending everything together.

This is a paste for a 'dry chile'
