Melitzanokeftethes Kroketes (Eggplant Croquettes)

Recipe Ingredients

  Eggplants
  Cracker meal
  Oil for frying
  The Mixture
1 1/2 cups 219g / 7.7ozBread crumbs
2   Eggs
1/2 cup 73g / 2.6ozKefalotiri cheese - grated or
1/2 cup 73g / 2.6ozParmesan cheese - grated
1 tablespoon 15mlBaking powder
2 tablespoons 30mlParsley - chopped
1 teaspoon 5mlOnion - chopped
  Salt and pepper to taste

Recipe Instructions

Wash the eggplants and pierce in several places with a fork. Boil in lightly salted water until tender; drain well. Remove skin and mash the pulp; measure it.

Mix 2 cup of eggplant pulp with the amount of ingredients listed above and blend well. Shape into croquettes or patties. Roll in cracker meal, and fry until golden brown.
