Basic Marinade For Grilled Meats And Fish Saltsa Marinata

Recipe Ingredients

2 cups  Wine
1 cup  Olive oil
2 x  Garlic - crushed
1 tablespoon  Minced fresh oregano
2   Bay leaves
2   Lemons - juice of
1/4 cup  Fresh parsley - chopped.

Recipe Instructions

Match the wine in this marinade to the meat: red wine for red meats and game and white wine for fish and poultry.

Marinate fish 1 to 2 hrs.

Marinate poultry and meant as long as overnight, depending upon the desired intensity of flavor. Be sure to cover and refrigerate mixture if marinating longer than 1 hour.

Before grilling, bring meats or fish to room temp. Baste with marinade as they cook.
