| 1 | Cinnamon stick - (3 inch stick) | |
| 2 teaspoons | Cardamom seeds* | |
| 1 teaspoon | Cloves - whole | |
| 1 teaspoon | Mace or | |
| 1/2 teaspoon | Nutmeg - freshly grated |
* -- measure after removing from pods
Roast spices separately and grind in a blender, a coffee grinder or with a mortar and pestle; add grated nutmeg, if used.
