Tuna Ki Kari - Curried Tuna

Recipe Ingredients

1 1/2 tablespoons 22mlVegetable oil
2 oz 56gOnion - cut into half rings
1   Garlic clove - very finely chopped
1 teaspoon 5mlCurry powder - as bolst's hot
1 packet  Good quality oil packed tuna - undrained
1   Fresh hot green chili - cut into fine rounds
1   piece fresh ginger root - peeled, julienned
3 tablespoons 45mlCoriander leaves - chopped
  Salt and pepper - to taste

Recipe Instructions

Put oil in non stick frying pan and set over medium-high heat. When hot, put in onion and garlic. Stir-fry until onion turns brown ant edges. Add curry powder; mix. Add tuna; mix well. Turn heat to low and add green chili, ginger and coriander; mix. Check for seasoning; mix and turn off heat. Serve hot or cold. As a sandwich filling, puff pastry filling, pasta salad.
