Parmesan Orzo (4 PTS)

Recipe Ingredients

1 tablespoon 15mlGrated Parmesan cheese
2 tablespoons 30mlChive-and-onion cream cheese
2 tablespoons 30mlSkim milk
1/8 teaspoon 0.6mlSalt
1/8 teaspoon 0.6mlPepper
2 tablespoons 30mlDrained diced pimento
2/3 cup 106g / 3.7ozUncooked orzo - (rice-shaped pasta)
1/3 cup 20g / 0.7ozSliced green onions

Recipe Instructions

Combine first 5 ingredients in a bowl; beat at medium speed of an

electric mixer until smooth. Stir in pimento.

Cook orzo in boiling water 8 minutes. Add green onions, and cook an

additional 2 minutes; drain well. Add to cream cheese mixture; stir well.

(serving size: 1 cup).
