California Brown Rice Salad (Vegan)

Recipe Ingredients

16 oz 454gCalifornia fruit cocktail
1 cup 160g / 5.6ozBrown rice
1   Tomato - diced
1 cup 110g / 3.9ozCelery - sliced
1/2 cup 31g / 1.1ozGreen onions - sliced
2 tablespoons 30mlRed wine vinegar
1 tablespoon 15mlVegetable oil
1 tablespoon 15mlDijon mustard
1/2 teaspoon 2.5mlTarragon
1/8 teaspoon 0.6mlGarlic powder

Recipe Instructions

Drain fruit cocktail, reserving 1/4 cup liquid; save remainder for other uses.

Cook rice according to package directions; chill thoroughly.

Toss rice with fruit cocktail, tomato, celery and green onions.

Combine reserved fruit cocktail liquid with vinegar, oil, mustard, tarragon and garlic powder.

Stir into rice mixture; chill for flavors to blend.
