Garden Wild Rice Salad

Recipe Ingredients

1   Uncle Ben's long grain and - wild rice blend (36
3   Water
1/4 cup 49g / 1.7ozMargarine or butter
1 1/2 cups 355mlCooking oil
1 cup 237mlLemon juice
3 cups 187g / 6.6ozTomatoes - fresh, diced
1 1/2 cups 219g / 7.7ozGreen pepper - diced
1 1/2 cups 219g / 7.7ozCucumber - pared and diced
1 cup 237mlParsley - fresh, finely

Recipe Instructions

1. Cook rice in water with margarine or butter according to package instructions, for 20 minutes.

2. Transfer rice and remaining liquid to shallow pan, cover and chill.

3. Fold in remaining ingredients.

4. Chill before serving.
