Ham And Black Bean Salad

Recipe Ingredients

3 cups 480g / 16ozCooked rice - cooled to room temperature
2 cups 320g / 11ozCanned black beans - - rinsed and drained
1   Red onion - chopped (medium)
1 cup 237mlCubed jicama - - (cut into 1/8-inch
1/2 cup 118mlSliced black olives
1/2 cup 73g / 2.6ozDiced red pepper
1/2 cup 73g / 2.6ozDiced green pepper
1/4 cup 59mlOlive oil - divided
4 oz 113gCubed cooked ham
3 tablespoons 45mlRed wine vinegar
1   Garlic clove - minced
1/2 teaspoon 2.5mlGround cumin
1/2 teaspoon 2.5mlChili powder
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlGround black pepper

Recipe Instructions

Combine rice, onion, jicama, olives, and peppers in large bowl; set aside.

Heat 1 tablespoon oil in large skillet over medium heat.

Add ham; cook 2 to 3 minutes stirring constantly. Add to rice mixture.

Combine remaining oil, vinegar, garlic, cumin, chili powder, salt and pepper in small jar with lid. Shake to blend.

Drizzle dressing over salad.
