Roast Beef Diablo Recipe - Cooking Index

1/4 cup | 15g / 0.5oz | Onion - finely chopped |
2 teaspoons | 10ml | Salt |
1/4 cup | 59ml | Chili sauce |
1 tablespoon | 15ml | Sugar |
1 tablespoon | 15ml | Worcestershire sauce |
3 tablespoons | 45ml | Vegetable oil |
1/2 cup | 118ml | Beef broth - divided |
1/4 teaspoon | 1.3ml | Pepper |
2 tablespoons | 30ml | All-purpose flour |
2 tablespoons | 30ml | Prepared mustard |
1 tablespoon | 15ml | Water |
1/4 cup | 59ml | Vinegar |
Brown roast on all sides in hot oil in large Dutch oven or roasting pan. Pour off all but 1 tbs drippings. Add onion, 1/4 cup broth, salt and pepper. Simmer 2 1/2 hrs or until meat is tender.
Combine flour, sugar, chili sauce, mustard, Worcestershire sauce and vinegar. Stir in water and pour over roast. Simmer about 30 minutes or until tender.
Remove roast and stir in remaining beef broth. Simmer about 5 minutes , strain and serve with roast.
