Fruitcake - 1 Recipe - Cooking Index
| 1 cup | Raisins | |
| 2 cups | Water | |
| 2 cups | Sugar | |
| 2/3 cup | Shortening | |
| 1 teaspoon | Baking soda | |
| 2 teaspoons | Baking powder | |
| 4 cups | White flour | |
| 1 teaspoon | Cinnamon | |
| 1 teaspoon | Allspice | |
| 1 teaspoon | Cloves | |
| 1 cup | Mixed fruit | |
| 1 cup | Currants |
In a pot, combine the first four ingredients. Bring to a boil & simmer for 1 minute. Set aside to cool.
Sift together dry ingredients. Make a well in the centre & fold in the boiled ingredients. Mix well.
Bake at 300F for 60 minutes. Test to see if done all the way through. If not, return to oven for a few more minutes.
Cool on a wire rack.
