Parkin Recipe - Cooking Index
1/2 | Oatmeal - fine | |
2 teaspoons | 10ml | Baking powder |
120 | Lard | |
2 teaspoons | 10ml | Ginger - ground |
1 teaspoon | 5ml | Mixed spice |
250 | Golden syrup |
Rub the lard into the oatmeal and mix in the spices and baking powder. Warm the syrup and mix it into the oatmeal until you have a stiff mixture.
Grease a flat baking tin, pour in the parkin and bake for 1 to 1 1/4 hours at 300F for gas mark 2
