Seven-Minute Burnt Sugar Frosting Recipe - Cooking Index
2 | Egg whites | |
1 1/2 cups | 297g / 10oz | Sugar |
2 tablespoons | 30ml | Burnt sugar syrup |
1/3 cup | 78ml | Cold water |
1 | Salt | |
1 teaspoon | 5ml | Vanilla extract |
Place all ingredients except vanilla in double boiler; mix thoroughly.
Cook, beating constantly with rotary or electric mixer, until mixture forms peaks, about 7 minutes.
Remove from heat. Add vanilla; beat until frosting reaches spreading consistency.
Ice cooled cake.
