Beef Salad

Recipe Ingredients

1 cup  Leftover beef - thinly sliced
6 cups  Potatoes - boiled and sliced (medium)
4   Tomatoes - peeled and sliced
1 teaspoon  Salt
1/4 teaspoon  Pepper
2 tablespoons  Wine vinegar
4 tablespoons  Vegetable oil
1/2 teaspoon  Dried tarragon leaves
1 tablespoon  Chopped parsley
2   Hard-boiled eggs - sliced

Recipe Instructions

In salad bowl, combine beef, potatoes, and tomatoes.

In mixing bowl, combine salt, pepper, vinegar, oil, and tarragon. Mix well.

Pour over salad. Sprinkle with parsley. Decorate with egg slices.
