Pumpkin Soup

Recipe Ingredients

2 cups 292g / 10ozPumpkin - trimmed and diced
2 cups 474mlWater
1 teaspoon 5mlSalt
4 cups 948mlMilk
1 1/2 tablespoons 22mlGranulated sugar
6   French bread - dried in warm oven, but not toasted
2 tablespoons 30mlButter - cut in small pieces

Recipe Instructions

In kettle or large saucepan, combine pumpkin, water, and salt. Bring to boil. Cover and simmer for 15 minutes. Strain, reserving liquid. Mash pumpkin.

Stir in cooking liquid. Return to pan. Add milk, sugar, and bread cut into small pieces. Bring to boil. Cover and simmer for 10 minutes. Off fire, add butter, stirring until butter is melted and well blended. Serve hot.
