Curried Couscous Soup (4 PTS)

Recipe Ingredients

1   Mediterranean curry couscous mix such as near east 5.7 ounces
1   No-salt-added diced tomatoes - undrained
4 cups 948mlWater
1/2 cup 73g / 2.6ozDiced zucchini
1 teaspoon 5mlCurry powder
1/4 teaspoon 1.3mlSalt
1/4 cup 23g / 0.8ozAlmonds - toasted

Recipe Instructions

1. Combine couscous mix and seasoning packet, tomatoes, and next 4

ingredients in a saucepan; bring to a boil. Reduce heat; simmer 5

minutes. Top with almonds. Serve immediately.

Yield: 4 servings (serving size: 1 1/2 cups soup and 1 tablespoon
