Garlic Beef Patties with Vegetables ( 6 points)

1   Yellow summer squash - cut into 1/2-inch (small)
  Slices
1 tablespoon 15mlChopped fresh oregano
  OR
1/2 teaspoon 2.5mlDried oregano leaves
  Ginger-Lime Marinade
1 1/2 lbs 681g / 24ozTuna, swordfish or halibut steaks - 3/4 to 1 inch thick
  Lime wedges - if desired
  **GINGER-LIME MARINADE**
1/4 cup 59mlLime juice
2 tablespoons 30mlOlive or vegetable oil
1 teaspoon 5mlFinely chopped gingerroot
1/4 teaspoon 1.3mlSalt
  Ground red pepper (cayenne)
1   Garlic - crushed

Recipe Instructions

Mix beef, salt, garlic powder and pepper. Shape mixture into 4 patties,

each

about 1/2 inch thick. Cook patties and onions in 10-inch skillet over

medium

heat about 5 minutes or until light brown; turn. Arrange bell pepper and

squash around patties; sprinkle with oregano. Cover and cook about 8

minutes

or until vegetables are crisp-tender and patties are no longer pink in

center and juice is clear.

Ginger-Lime Marinade

1 1/2 pounds tuna, swordfish or halibut steaks -- 3/4 to 1 inch

--thick

Lime wedges -- if desired

**GINGER-LIME MARINADE**

1/4 cup lime juice

2 tablespoons olive or vegetable oil

1 teaspoon finely chopped gingerroot

1/4 teaspoon salt

Dash ground red pepper (cayenne)

1 clove garlic -- crushed

Prepare Ginger-Lime Marinade. If fish steaks are large, cut into 6 serving

pieces. Place in shallow nonmetal dish or heavy-duty resealable plastic

bag.

Add marinade; turn fish to coat with marinade. Cover dish or seal bag and

refrigerate at least 1 hour but no longer than 24 hours.

Brush grill rack with vegetable oil. Heat coals or gas grill for direct

heat. Remove fish from marinade; reserve marinade. Cover and grill fish

about 4 inches from medium heat 15 to 20 minutes, brushing 2 or 3 times

with

marinade and turning once, until fish flakes easily with fork. Discard any

remaining marinade. Serve fish with lime wedges.

Mix all ingredients.
