Mixed Bitter Greens with Raspberry Vinaigrette (1.5 Points)

Recipe Ingredients

2 cups 220g / 7.8ozMixed bitter greens (Arugula, Radicchio,
  Ect)
1   Shallot - peeled and thinly
  Sliced
2 teaspoons 10mlRaspberry vinegar
2 teaspoons 10mlLight olive oil
  Black pepper - freshly ground

Recipe Instructions

Place greens in a medium bowl and sprinkle with shallot. In a small bowl,

whisk together vinegar and oil. Add to greens and toss. Mound salad on

serving plates and top with a few grinds of pepper.

Makes 2 servings.
