| 1/2 cup | 118ml | Dry sherry |
| 2 tablespoons | 30ml | Sherry vinegar |
| 2 tablespoons | 30ml | Lemon juice |
| 1 tablespoon | 15ml | Tomato paste |
| 1 tablespoon | 15ml | Sugar |
| 2 tablespoons | 30ml | Minced garlic |
| 2 teaspoons | 10ml | Salt |
| 2 tablespoons | 30ml | Ground cumin |
| 1/2 teaspoon | 2.5ml | Cayenne pepper |
| 24 | Chicken drumettes | |
| 2 tablespoons | 30ml | Chopped cilantro - for garnish |
1. In a stainless steel, glass, or ceramic bowl, combine sherry, vinegar, lemon juice, tomato paste, sugar, garlic, salt, cumin, and cayenne. Marinate chicken in mixture for at least 4 hours or overnight.
2. Preheat oven to 350 degrees F. Bake uncovered for 45 minutes. Serve hot, garnished with chopped cilantro.
Makes 2 dozen drumettes.
