Spinach Salad With Hot Bacon Dressing

Recipe Ingredients

5   Lean bacon - chopped fine
2 tablespoons 30mlMinced shallot
1/2 cup 118mlCider vinegar
1/2 teaspoon 2.5mlSugar
1 teaspoon 5mlDijon mustard
1 tablespoon 15mlOlive oil
  Salt - to taste
  Freshly-ground black pepper - to taste
1 lb 454g / 16ozFresh young spinach - coarse stems
  Discarded, leaves washed well, spun dry

Recipe Instructions

In a large skillet, cook bacon over moderate heat, turning it, until it is crisp, transfer it to paper towel-lined plate to drain, and discard all but 2 tablespoons of the fat. In the remaining fat, cook the shallot for 1 minute. Add the vinegar, sugar, mustard, oil, and salt and pepper to taste. Bring to a boil, pour over spinach and toss. Serve sprinkled with the bacon.

This recipe yields 4 servings.
