Champagne Infused Strawberry Soup

Recipe Ingredients

2 cups 474mlWater
1/2 cup 99g / 3.5ozSugar
3 cups 711mlStrawberries (frozen can be used)
  Juice from 1/2 a lemon
1/4 cup 59mlChampagne
4   Mint leaves
  Sour Cream Sorbet - see * Note

Recipe Instructions

* Note: See the "Sour Cream Sorbet" recipe which is included in this collection.

In a saucepan, bring water, sugar, strawberries and lemon juice to a boil. Let simmer for ten minutes.

Blend mixture together in a mixer, then strain through a sieve. Set aside.

To serve: Pour strawberry soup in a bowl. Put 1 scoop of Sour Cream Sorbet in the middle of bowl and drizzle with champagne and garnish with mint.

This recipe yields 4 servings.
