| 1/3 cup | 78ml | Light mayonnaise |
| 3 tablespoons | 45ml | Skim milk |
| 2 teaspoons | 10ml | Horseradish |
| 1 teaspoon | 5ml | Lemon juice |
| 1/8 teaspoon | 0.6ml | Lemon pepper |
| 1 cup | 237ml | Water |
| 1/2 cup | 118ml | Chablis |
| 1/2 teaspoon | 2.5ml | Hot sauce |
| 1 teaspoon | 5ml | Onion - sliced (medium) |
| 4 | Lemon rind | |
| 1 lb | 454g / 16oz | Grouper fillet |
| 1/2 cup | 55g / 1.9oz | Carrot - shredded |
| 1/2 cup | 31g / 1.1oz | Tomato - chopped |
| 6 cups | 1422ml | Romaine - shredded |
Process first 6 ingredients in the container of an electric blender or food processor until smooth, set aside. Combine water and next 4 ingredients in a large skillet; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Add fillet; cover and simmer 20 minutes or until fish flakes easily when tested with a fork.
Gently remove fillet, and discard liquid. Cover and chill fillet 1 hour. Flake fillet with a fork; arrange fillet, carrot, and tomato on a lettuce-lined serving platter. Serve with Horseradish dressing. Alternate fish: Jumbo cod, sea bass.
