Chilled Grouper Salad

Recipe Ingredients

1/3 cup 48g / 1.7ozLight cottage cheese
1/3 cup 78mlLight mayonnaise
3 tablespoons 45mlSkim milk
2 teaspoons 10mlHorseradish
1 teaspoon 5mlLemon juice
1/8 teaspoon 0.6mlLemon pepper
1 cup 237mlWater
1/2 cup 118mlChablis
1/2 teaspoon 2.5mlHot sauce
1 teaspoon 5mlOnion - sliced (medium)
4   Lemon rind
1 lb 454g / 16ozGrouper fillet
1/2 cup 55g / 1.9ozCarrot - shredded
1/2 cup 31g / 1.1ozTomato - chopped
6 cups 1422mlRomaine - shredded

Recipe Instructions

Process first 6 ingredients in the container of an electric blender or food processor until smooth, set aside. Combine water and next 4 ingredients in a large skillet; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Add fillet; cover and simmer 20 minutes or until fish flakes easily when tested with a fork.

Gently remove fillet, and discard liquid. Cover and chill fillet 1 hour. Flake fillet with a fork; arrange fillet, carrot, and tomato on a lettuce-lined serving platter. Serve with Horseradish dressing. Alternate fish: Jumbo cod, sea bass.
