Red Snapper In Nut Crust Recipe - Cooking Index
| 2 lbs | 908g / 32oz | Red snapper fillets - skinless |
| 1/3 cup | 20g / 0.7oz | Flour |
| 1 cup | 146g / 5.1oz | Bread crumbs |
| 1 cup | 237ml | Macadamia nuts - chop fine |
| 1 cup | 237ml | Pecans - chop fine |
| 2 | Eggs - slightly beaten | |
| 2 tablespoons | 30ml | Olive oil |
Cut fish into serving size portions. Add salt/pepper tsp taste. Combine nuts and crumbs.
Dust fish with flour. dredge in egg then in crumb and nut mixture. Saute in olive oil until golden brown, about 2 minutes each side.
Transfer fish to a baking dish and bake 3-4 minutes at 350 deg F
