Poultry Sausage Recipe - Cooking Index
| 1/2 lb | 227g / 8oz | Ground chicken or turkey breast |
| 1/8 teaspoon | 0.6ml | Ground sage |
| 1/8 teaspoon | 0.6ml | Fennel seed |
| 1/4 teaspoon | 1.3ml | Crushed red pepper flakes |
| Freshly ground pepper | ||
| Nonstick cooking spray | ||
| Salt |
In medium bowl, combine ground chicken, sage, fennel, red pepper flakes and pepper. Knead very briefly (excessive kneading makes poultry tough). Shape into 4 patties.
Spray small skillet with nonstick cooking spray. Add patties; cook until well browned outside and cooked through inside, 3 to 5 minutes a side. Remove from skillet; season with salt.
Yield: 2 servings.
