Grilled Sambal Quail With Braised Green Papaya Recipe - Cooking Index
| 4 tablespoons | 60ml | Sambal (condiment) | 
| 2 tablespoons | 30ml | Minced garlic | 
| 2 tablespoons | 30ml | Minced ginger | 
| 1/2 cup | 118ml | Red wine | 
| 1/4 cup | 36g / 1.3oz | Chopped scallions | 
| 2 tablespoons | 30ml | Molasses | 
| 1/2 cup | 118ml | Canola oil | 
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 8 | Quail | |
| Chili Oil - see * Note | ||
| Braised Green Papaya - see * Note |

Mix all ingredients, marinate and refrigerate quail for at least 6 hours; overnight is ideal. Season the quail and grill until done; this will take about 20 minutes. Be careful not to burn the skin. Place on top of the Braised Green Papaya. Garnish with Chili Oil.
This recipe yields 4 servings.
