Recipe Ingredients

2   Fresh white corn
2 teaspoons 10mlOlive oil
3 cups 480g / 16ozSliced green beans - (1 pound)
  (2-inch)
1/2 cup 31g / 1.1ozVertically sliced onion
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlPepper
2 1/2 cups 156g / 5.5ozChopped seeded tomato
1 tablespoon 15mlChopped fresh basil
2 teaspoons 10mlWhite wine vinegar

Recipe Instructions

Cut whole kernels from ears of corn; set corn aside, and discard cobs.

Heat oil in a large nonstick skillet over medium-high heat. Add green beans and onion; saute 7 minutes. Add corn, salt, and pepper; cook over medium heat 5 minutes, stirring occasionally. Remove from heat; stir in remaining ingredients. Yield: 5 servings (serving size: 1 cup).
