| 1/4 cup | 49g / 1.7oz | Margarine or butter | 
| 4 cups | 948ml | Sliced zucchini or summer squash | 
| 3 cups | 711ml | Sliced fresh mushrooms | 
| 1 cup | 62g / 2.2oz | Onion - sliced (medium) | 
| 1 | Celery - sliced | |
| 1/2 teaspoon | 2.5ml | Salt | 
| 1/2 teaspoon | 2.5ml | Thyme leaves | 
| 2 teaspoons | 10ml | Tomatoes - quartered (medium) | 
| 1/4 cup | 36g / 1.3oz | Grated parmesan cheese | 
In a large skillet, combine all except tomatoes and cheese. Cover loosely and cook on medium heat for about 10 minutes or until tender, stirring occasionally. Add tomatoes and cheese; cook 1 to 2 minutes or until heated through. Serve immediately.
