| 1 | Black-eyed peas - drained | |
| 1 | White hominy - drained, chopped | |
| 3 | Spring onions - chopped | |
| 1/2 cup | 31g / 1.1oz | Onion - chopped |
| 1 | Green pepper - chopped | |
| 2 | Tomatoes - chopped (medium) | |
| 2 | Garlic - minced | |
| 1/3 cup | 48g / 1.7oz | Chopped parsley |
| 1 cup | 237ml | Picante/salsa |
| 1 cup | 62g / 2.2oz | Peg corn - sliced |
| Cilantro - if desired |
Add all ingredients together, mix, cover for a day. Salt and Pepper to taste.
Serve with small round Doritos.
