California Rillettes Recipe - Cooking Index
| 2 tablespoons | 30ml | Flat-leaf parsley leaves | 
| 1 tablespoon | 15ml | Fresh tarragon leaves | 
| 1 | Red onion | |
| 1 cup | 62g / 2.2oz | Cooked meat - (chicken, veal, beef or fish) | 
| 1 teaspoon | 5ml | Lemon zest | 
| 1 teaspoon | 5ml | Lemon juice | 
| 6 tablespoons | 90ml | Unsalted butter | 
| 1 teaspoon | 5ml | Fine sea salt - or to taste | 
| 1 teaspoon | 5ml | Freshly ground black pepper - or to taste | 
In a food processor or blender, process ingredients until finely pureed and well blended. Taste, adjust seasoning, pack into ramekins and chill. Serve with toast or crackers.
