Recipe Ingredients

2 tablespoons 30mlVegetable oil
2 tablespoons 30mlOnions - finely chopped (medium)
1 1/2 teaspoons 7.5mlFresh ginger - peeled
1 1/2 teaspoons 7.5mlGarlic
1/2 teaspoon 2.5mlTurmeric
2 teaspoons 10mlGround coriander
2 teaspoons 10mlGround cumin
  Coarse salt
2   Whole tomatoes - chopped
1 teaspoon 5mlChile powder - or more to taste
40   Okra - trimmed and cut into 1-inch pieces
1/2   Green bell pepper - chopped
1 teaspoon 5mlGaram masala

Recipe Instructions

1. Grind ginger and garlic into a paste using a small food processor.

2. Heat oil in large skillet, over medium heat, add onions, and saute until translucent, about 5 minutes. Add ginger-garlic paste, turmeric, coriander, cumin, and salt; cook, stirring, 1 to 2 minutes.

3. Add tomatoes, chile powder, okra, and green peppers. If mixture appears dry, add 1/4 cup water. Add garam masala, and cook, covered, 15 to 20 minutes.
