Thai Sticky Rice Recipe - Cooking Index
2 cups | 320g / 11oz | Sticky rice |
1 1/2 cups | 355ml | Coconut milk |
1/2 cup | 99g / 3.5oz | Sugar |
1 teaspoon | 5ml | Salt |
20 | Banana leaves - (if desired) |
Wash and clean stick rice. Cover with hot water and let stand for 15 minutes. Drain. Add coconut milk and cook over medium heat until liquid is almost dry. Cool.
Put 2 pieces of banana leaf together. Put 2 Tbsp of cooked sticky rice in the center of the banana leaf. (You may add a slice of ripe banana on top of rice if desired.) Add 2 more Tbsp of stick rice. (Wrap the rice around fresh banana if included.) Bring the two lengths of the leaf toward the center so that it overlaps the other and tuck two ends under.
Repeat till all rice is used up. Steam for 1 hour. Naomi (Elloha's mom)
