Edith's Sweet Potato Souffle (8x8 Pan) Recipe - Cooking Index
| 3 cups | 711ml | Mashed cooked sweet potatoes |
| 3 | Eggs | |
| 1 cup | 198g / 7oz | Sugar - (or 1/2 cup) |
| 1 tablespoon | 15ml | Vanilla |
| 1 | Melted butter | |
| Topping | ||
| 1/2 | Margarine | |
| 1/2 cup | 31g / 1.1oz | Self rising flour |
| 1/2 cup | 80g / 2.8oz | Brown sugar |
| 1/2 cup | 118ml | Nuts - (pecan-walnuts) |
Mix together first five ingredients and pour into a pan sprayed with Pam.
Mix together topping ingredients with hands until crumbly.
Bake at 350F until top is brown and crisp.
Ingredients are doubled for a 9x13 pan.
