Jim Tarantino's Basic Beef Marinade Recipe - Cooking Index
| 1/4 cup | 59ml | Sherry vinegar or red wine vinegar | 
| 1/2 cup | 118ml | Dry red wine | 
| 2 tablespoons | 30ml | Soy sauce | 
| 1 tablespoon | 15ml | Worcestershire sauce | 
| 1 teaspoon | 5ml | Sugar | 
| 1/2 cup | 118ml | Olive oil | 
| 2 | Garlic - sliced | |
| 2 tablespoons | 30ml | Parsley - fresh, chopped | 
| 2 tablespoons | 30ml | Fresh herb combo: | 
| Rosemary - tarragon, thyme | ||
| 1 | Black pepper to taste | 
Combine the vinegar, wine, soy sauce, Worcestershire sauce, and sugar in a non-reactive mixing bowl. Whisk in olive oil a little at a time. Add the pepper, parsley and herbs.
For beef steaks marinate for 6 to 8 hours. For roasts and brisket, 10 to 12 hours.
