Tomatillo-Corn Relish Recipe - Cooking Index
| 8 cups | 1168g / 41oz | Tomatillos, husked and coarsely chopped (medium) |
| 1 tablespoon | 15ml | Red onion, finely diced |
| 1 tablespoon | 15ml | Jalapeno - finely minced (small) |
| 2 tablespoons | 30ml | Fresh lime juice |
| 2 tablespoons | 30ml | Olive oil |
| 3/4 cup | 46g / 1.6oz | Fresh corn kernels |
| Salt and freshly ground pepper |
Combine all ingredients in a small bowl.
