Chipotle Barbecue Sauce - 4 Recipe - Cooking Index
| 1/2 | Onion - minced (medium) | |
| 4 | Garlic - minced | |
| 1 tablespoon | 15ml | Bacon fat |
| 28 oz | 795g | Catsup |
| 8 | Chipotles en adobo - minced | |
| 2 tablespoons | 30ml | Good chile powder |
| 2 teaspoons | 10ml | Cumin |
| 2 teaspoons | 10ml | Thyme |
| 6 oz | 170g | Amber beer |
| 1/2 cup | 118ml | Cider vinegar |
| 2 tablespoons | 30ml | Prepared mustard |
| 1 tablespoon | 15ml | Worcestershire |
| 1 tablespoon | 15ml | Nuoc nam |
| 1/4 cup | 59ml | Bourbon |
| 1/2 tablespoon | 7.5ml | Cocoa |
| Black pepper to taste |
Saute onions and garlic on med high heat until soft. Add everything else. Simmer uncovered until thick.
A bourbon based glaze might be nice. A little Worcestershire, a little brown sugar, a little bourbon.
I prefer bourbon to whiskey. Evan Williams is a lot cheaper than JD. Picked up 1/2 gal for $13 in New Hampshire. Not bad for 7 yr old sourmash. I put 1/4 cup in my basic red sauce and in Bad Attitude chili. Here's my latest version.
