Vegetable Chunk Salad

Recipe Ingredients

1/2   Cherry or grape tomatoes - halved
1   Red or green bell pepper - cut bite size (large)
1/2   Red onion - chopped
1/2   European (seedless) cucumber - cut bite size
2   Celery ribs - cut 1" pieces
1/2   Yellow squash - cut bite size
3 tablespoons 45mlExtra-virgin olive oil - (to 1/4 cup)
2 tablespoons 30mlRed wine vinegar
1 teaspoon 5mlSugar
1 teaspoon 5mlDried Italian seasoning
  Coarse salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Combine chopped vegetables in a medium bowl. Place oil, vinegar, sugar, and Italian seasoning in a small plastic container with a lid. Secure lid and shake dressing vigorously for 1 minute. Pour dressing over salad and toss. Season salad with salt and pepper, to taste.

This recipe yields 4 servings.
