| 1 | Tomato sauce | |
| 2 cups | 474ml | Water |
| 1 | Tomato paste | |
| 2 | Dried chiles | |
| 1/2 cup | 118ml | Ketchup |
| 2 tablespoons | 30ml | Worcestershire sauce |
| 2 teaspoons | 10ml | Chili powder |
| 1 | Juice of two lemons | |
| 1/4 cup | 59ml | Red wine vinegar |
| 2 1/2 teaspoons | 12ml | Salt |
| 1/4 teaspoon | 1.3ml | Tabasco |
| 2 tablespoons | 30ml | Pepper |
| 1 | Onion - finely chopped | |
| 1 | Garlic - minced | |
| 2 | Bay leaf | |
| 1/2 lb | 227g / 8oz | Butter |
| 2 teaspoons | 10ml | Dry mustard |
Simmer all ingredients 30 minutes.
Strain and cool.
