Apple Marinated Pork Roast

Recipe Ingredients

1 cup 237mlDry white wine
1/3 cup 78mlApple juice, from frozen concentrate - thawed
1 cup 62g / 2.2ozOnion - sliced thin rings (small)
1/4 cup 59mlVegetable oil
1 tablespoon 15mlWorcestershire sauce
1 teaspoon 5mlDried thyme - crushed
1/4 teaspoon 1.3mlGround cloves
3 lbs 1362g / 48ozPork center rib roast

Recipe Instructions

In a bowl, combine all ingredients except pork roast. Place pork roast in a plasticupbag; set in shallow baking pan. Pour marinade over pork and close bag. Marinate in refrigerator for 3 to 24 hours, turning occasionally. Remove roast from marinade; reserve marinade. Place roast, rib-side down, in shallow roasting pan. Pour reserved marinade over roast. Insert meat thermometer so tip does not touch bone.

Roast meat, uncovered, at 325 degrees for 2 1/2 to 3 hours, or until meat thermometer reaches 170 degrees. Baste roast with marinade once or twice during cooking.  To serve, transfer to a heated serving platter and slice.
