Hominy And Sausage Bake

Recipe Ingredients

2		White or yellow hominy - 14oz
4		Eggs - beaten
8 oz	227g	Chorizo or pork sausage
		Cooked and drained
3/4 cup	109g / 3.8oz	Cheddar cheese - shredded
1/2 cup	31g / 1.1oz	Green onion - sliced
1		Green chilies; chopped - 4oz

Recipe Instructions

Preheat the oven to 350F.

Grease a 9-inch glass baking dish. In a large bowl combine the hominy, eggs, chorizo, cheese, onion and chilies if desired. Pour into the prepared dish.

Bake for 30 to 35 minutes or until set. Let stand for 5 minutes before serving.
