1/2 cup | 99g / 3.5oz | Shortening |
1 cup | 198g / 7oz | Sugar |
2 | Eggs | |
3/4 cup | 177ml | Mashed bananas - (ripe) |
1 1/4 cups | 78g / 2.8oz | Cake flour - sifted -or- |
1 1/4 cups | 78g / 2.8oz | All-purpose flour - (plus 1 tbsp.) |
3/4 teaspoon | 3.8ml | Baking soda |
1/2 teaspoon | 2.5ml | Salt |
1/4 cup | 36g / 1.3oz | Chopped nuts - (optional) |
In a medium bowl cream the shortening and sugar until light. Add the eggs one at a time, beating well after each addition. Stir in the bananas. In a separate bowl stir together the flour, baking soda, salt, and nuts.
Add the dry ingredients to the banana mixture, stirring until well blended. Pour into a greased 9-inch square pan.
Bake at 350F for 30 to 35 minutes.
Cut in squares.

Banana bread is one of my favorite things to bake and to eat! This recipe is excellent and believe me I've tried a lot of recipes. It comes out so moist and tastes delicious. I usually add a little more banana than the recipe calls for, and I also add a little vanilla extract, cinnamon and sometimes even coconut to spice it up! Try it and tell me what you think. You may even come up with some additions of your own to make it even better. If you are wondering about the source for this recipe, yes...it came from the real "Mary Ann" of Gilligan's Island". I even met her too!
