Mom's Pineapple Nut Loaf Recipe - Cooking Index
| 2 cups | 125g / 4.4oz | Flour |
| 1/2 cup | 99g / 3.5oz | Sugar |
| 1 teaspoon | 5ml | Baking powder |
| 1 1/2 teaspoons | 7.5ml | Salt |
| 1 cup | 160g / 5.6oz | Golden raisins |
| 1 cup | 146g / 5.1oz | Chopped nuts |
| 1 | Egg - beaten | |
| 2 tablespoons | 30ml | Vanilla |
| 2 tablespoons | 30ml | Butter or margarine - melted |
| 1 teaspoon | 5ml | Baking soda |
| 16 oz | 454g | Pineapple - undrained |
| (1 can) - ¥ |
Sift into mixing bowl flour, sugar, baking powder and salt. Add raisins and nuts.
Combine egg, vanilla and butter; add to mixture. Dissolve soda in pineapple with juice; add to batter, mixing thoroughly.
Pour into greased and lightly floured large loaf pan.
Bake at 350F for 1 hour, or until done. Remove from baking pan; cool on rack.
