Sweet Potato And Apple Puree Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Sweet potatoes - peeled and thinly sliced |
1/2 teaspoon | 2.5ml | Ginger - ground |
3 tablespoons | 45ml | Orange juice |
1 1/2 lbs | 681g / 24oz | Apples - peeled, quartered and thinly slice |
1 tablespoon | 15ml | Lemon juice |
1/2 teaspoon | 2.5ml | Cinnamon - ground |
2 tablespoons | 30ml | Orange juice |
Place sweet potatoes in pot and cover the potatoes with water. Cover the pot and boil the potatoes until they are tender, 10 to 15 minutes.
Put the apples, ginger and the first measure of orange juice in a skillet. Saute until the apples are tender. Use a food processor or food mill to puree the apples with the potatoes.
Add the second measure of orange juice, lemon juice and cinnamon. Serve.
