Baked Rockfish

Recipe Ingredients

1/2 cup 118mlBasil-Garlic Sauce - * see note
3 tablespoons 45mlLemon juice
1   Carrot - chopped
1   Leek - chopped
2 tablespoons 30mlFirm butter
2 lbs 908g / 32ozRockfish or red snapper - drawn

Recipe Instructions

Heat oven to 375 degrees. Mix Basil-Garlic Sauce, lemon juice, carrot, and leek. Cut butter into small pieces. Place in rectangular baking dish, 13- by 9- by 2-inches. Place rockfish on butter. Spread vegetable mixture over fish. Cover and bake 40 minutes or until fish flakes easily with fork.
