Nutty Couscous Recipe - Cooking Index
A wonderful last-minute side dish, couscous requires little attention and works well with a number of complementary ingredients such as tomato, peppers, herbs, pesto, etc. Couscous is semolina grain that has been rolled, dampened and coated with fine wheat flour.
Courses: Side dish| 1 3/4 cups | 414ml | Chicken broth |
| 1 cup | 237ml | Couscous |
| 1/3 cup | 48g / 1.7oz | Toasted walnuts - chopped |
| 2 tablespoons | 30ml | Finely diced red bell pepper |
| 1 tablespoon | 15ml | Minced Italian parsley |
| Pepper - to taste |
Bring chicken broth to a boil in a small saucepan. Add remaining ingredients, and stir to blend. Cover and remove from heat. Let stand for 5 to 10 minutes or until all the liquid has been absorbed. Fluff with a fork before serving.
Serves 4.
